Pineapple Broccoli Chicken Stir-Fry

Pineapple Broccoli Chicken

A great healthy meal that is quick and easy to prepare. Multiply the recipe to increase servings as necessary.

Ingredients

  • 3 oz chicken breast (3 Blocks Protein) 
  • 1 tsp olive oil (3 Blocks Fat)
  • 3/4 cup pineapple, cubed (1.5 Blocks Carb)
  • 1.5 cups broccoli (1.5 Blocks Carb)

Seasonings

  • Garlic Powder
  • Salt
  • Pepper
  • Ginger

Directions

  1. Heat olive oil and a few slices of ginger in a non-stick frying pan
  2. Cut chicken into bite-size pieces, add to olive oil and brown stirring often
  3. Add salt, pepper, and garlic to taste
  4. Add pineapple and broccoli to chicken mixture
  5. Cook chicken mix until chicken is cooked through, pineapple has softened, and juice has thickened slightly (about 5 minutes)
  6. Serve immediately

Variations

Cut olive oil in half and sprinkle final product with almond slivers
