Oatmeal Bake

This easy to make Oatmeal Bake makes for a great healthy snack. Cut into 12 pieces to make 1 block portions. Keeps for a week in the fridge and up to 3 weeks in the freezer.

 

 

 

Ingredients:

  • 3 cups rolled oats (9 Blocks Carb)
  • 2 tsp. sugar (1 Block Carb)
  • 2 tsp. baking powder (NO carbs/protein/fat)
  • ½ cup applesauce (1 Block Carb)
  • 8 Whole Eggs or 2 cups egg substitute (8 Blocks Protein)
  • 1 cup milk (1 Block Protein 1 Block Carb)
  • Protein Powder to measure 5 Blocks (5 Blocks Protein)
  • ½ cup blueberries (1 Block Carb)
  • 1 cup strawberries - diced (1 Block Carb)
  • 5 teaspoons olive oil (~14 Blocks Fat)

Seasoning:

  • ½ teaspoon cinnamon
  • ½ teasspoon sea salt
  • 1 teaspoon vanilla

Directions:

  1. Preheat oven to 350 degrees
  2. Mix the dry ingredients in one bowl
  3. Combine milk, eggs and vanilla extract in another bowl
  4. Add milk mixture to dry ingredients, fold in strawberries or blueberries. 
  5. Mix in 4 teaspoons of olive oil.
  6. Coat a 9x12 non-stick pan with one teaspoon of olive oil.
  7. Place mixture into pan. Bake about 25-30 minutes. Test the center with a toothpick.

Variations:

  • Any fresh fruit can be substituted for the blueberries and strawberries as long as it is 2 blocks worth.
