
This easy to make Oatmeal Bake makes for a great healthy snack. Cut into 12 pieces to make 1 block portions. Keeps for a week in the fridge and up to 3 weeks in the freezer.
Ingredients:
- 3 cups rolled oats (9 Blocks Carb)
- 2 tsp. sugar (1 Block Carb)
- 2 tsp. baking powder (NO carbs/protein/fat)
- ½ cup applesauce (1 Block Carb)
- 8 Whole Eggs or 2 cups egg substitute (8 Blocks Protein)
- 1 cup milk (1 Block Protein 1 Block Carb)
- Protein Powder to measure 5 Blocks (5 Blocks Protein)
- ½ cup blueberries (1 Block Carb)
- 1 cup strawberries - diced (1 Block Carb)
- 5 teaspoons olive oil (~14 Blocks Fat)
Seasoning:
- ½ teaspoon cinnamon
- ½ teasspoon sea salt
- 1 teaspoon vanilla
Directions:
- Preheat oven to 350 degrees
- Mix the dry ingredients in one bowl
- Combine milk, eggs and vanilla extract in another bowl
- Add milk mixture to dry ingredients, fold in strawberries or blueberries.
- Mix in 4 teaspoons of olive oil.
- Coat a 9x12 non-stick pan with one teaspoon of olive oil.
- Place mixture into pan. Bake about 25-30 minutes. Test the center with a toothpick.
Variations:
- Any fresh fruit can be substituted for the blueberries and strawberries as long as it is 2 blocks worth.
